Victory Garden Special Salad “Nicoise” Recipe

"Salad Nicoise"
1 serving
Ingredients
¾ cup green and yellow beans
1/8 cup basil chopped
1 small potato
3 tbsp halved olives
¼ cup Whole Foods Tuna Cranberry Salad
Dashes of lemon juice
Salt + Pepper
Pinch of dried thyme, dried rosemary, freeze-dried chives, dried sweet basil leaves, and dried parsley
Instructions
1. Cook the potato in the microwave for 1 minute and thirty seconds. Remove and cut in half. Continue cooking for another 30 seconds. Take out and chop once more in half.
2. Layer beans, basil, olives, quartered potato, and tuna cranberry salad on a plate.
3. Top with dashes of lemon juice, salt + pepper, and the dried herbs.
