Victory Garden Special Salad “Nicoise” Recipe

"Salad Nicoise"​

1 serving​



Ingredients

  • ¾ cup green and yellow beans​

  • 1/8 cup basil chopped​

  • 1 small potato​

  • 3 tbsp halved olives​

  • ¼ cup Whole Foods Tuna Cranberry Salad​

  • Dashes of lemon juice​

  • Salt + Pepper​

  • Pinch of dried thyme, dried rosemary, freeze-dried chives, dried sweet basil leaves, and dried parsley


Instructions​

1. Cook the potato in the microwave for 1 minute and thirty seconds. Remove and cut in half. Continue cooking for another 30 seconds. Take out and chop once more in half. ​

2. Layer beans, basil, olives, quartered potato, and tuna cranberry salad on a plate.​

3. Top with dashes of lemon juice, salt + pepper, and the dried herbs.
